Spicy Spinach and Cheese Stuffed Mushrooms
Ingredients
- 12 large button mushrooms, stems removed
- 2 cups fresh spinach leaves, chopped
- 1 cup cream cheese, softened
- 1/4 cup sharp cheddar cheese, shredded
- 1/4 cup Parmesan cheese, grated
- 1 clove garlic, minced
- 1/2 teaspoon crushed red pepper flakes
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley, chopped (optional garnish)
Instructions
1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Mushrooms:
Clean the mushroom caps with a damp cloth to remove any dirt. Carefully remove stems and set caps aside on a baking sheet.
3. Cook the Spinach:
In a skillet over medium heat, add olive oil and minced garlic. Sauté for about 1 minute until fragrant. Add the chopped spinach, crushed red pepper flakes, and a pinch of salt. Cook until the spinach is wilted, approximately 2-3 minutes. Remove from heat and allow to cool slightly.
4. Mix the Filling:
In a bowl, combine the cooked spinach with cream cheese, cheddar cheese, Parmesan cheese, and a dash of pepper. Stir until well blended.
5. Stuff the Mushrooms:
Carefully spoon the spinach cheese mixture into each mushroom cap, slightly mounding with the back of the spoon.
6. Bake:
Place the stuffed mushrooms in the preheated oven. Bake for 20 minutes or until the tops are golden and bubbly.
7. Garnish and Serve:
Just before serving, sprinkle with chopped fresh parsley for a burst of color and additional flavor. Serve warm.
