Spicy Stove-Top Beef Chuck Roast with Bell Pepper Salsa



Ingredients



For the Beef Chuck Roast:
- 2 lbs beef chuck roast
- 2 tablespoons olive oil
- 2 tablespoons Worcestershire sauce
- 1 tablespoon cornstarch
- 1 teaspoons chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 4 cloves garlic, minced

For the Bell Pepper Salsa:
- 1 red bell pepper, diced
- 1 (14.5 oz) can diced tomatoes
- 1 (4 oz) can diced green chiles
- 2 tablespoons tomato paste
- 1/2 cup sliced jalapeños
- Salt and pepper to taste

For Topping & Garnish:
- 1 cup shredded cheese (cheddar or your choice)
- 1/2 cup sour cream
- 1/4 cup cilantro, chopped
- 1 ripe avocado, diced

Instructions



1. Prepare the Beef:
a. Pat dry the beef chuck roast with paper towels.
b. Rub the roast with Worcestershire sauce, cornstarch, chili powder, salt, and pepper.
c. Heat 2 tablespoons of olive oil in a large stovetop pot over medium-high heat.
d. Add the garlic and sauté for 1 minute until fragrant.
e. Place the seasoned roast in the pot and sear on each side for about 4 minutes until browned.

2. Cook the Beef:
a. Lower the heat to medium.
b. Cover the pot and let the roast cook for approximately 2 to 2.5 hours, turning occasionally, until it’s tender. Add water as needed to prevent sticking.
c. Once done, remove the roast from the pot and allow it to rest for 10 minutes before slicing.

3. Prepare the Bell Pepper Salsa:
a. Using the same pot, add the diced red bell pepper, diced tomatoes, diced green chiles, and tomato paste.
b. Stir well to combine and cook for 10 minutes over medium heat until the mixture thickens slightly.
c. Season with salt and pepper to taste.

4. Assemble and Serve:
a. Slice the beef chuck roast into serving portions.
b. Serve by topping each slice with a generous spoonful of bell pepper salsa.
c. Sprinkle shredded cheese over the top, followed by a dollop of sour cream.
d. Garnish with diced avocado, chopped cilantro, and sliced jalapeños.
