Spicy Tex-Mex Bean and Pea Protein Chili



Ingredients



- 2 tablespoons vegetable oil
- 1 cup textured pea protein
- 1 medium onion, diced
- 3 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 1 can (15 oz) kidney beans, rinsed and drained
- 1 can (15 oz) black beans, rinsed and drained
- 2 tablespoons chili powder
- 1 tablespoon ground cumin
- 1 teaspoon spice blend (your choice for added flavor)
- 1 1/2 cups vegetable broth
- Salt and pepper to taste
- Optional: Fresh cilantro and lime wedges for garnish

Instructions



1. Prepare Ingredients:
Begin by gathering all your ingredients. Dice the onion, and mince the garlic cloves. Rinse and drain the beans to remove excess sodium.

2. Cook Onion and Garlic:
In a large pot, heat 2 tablespoons of vegetable oil over medium heat. Add diced onion and garlic, sautéing them for about 3-4 minutes until the onion becomes translucent, but not browned.

3. Add Pea Protein:
Stir in 1 cup of textured pea protein to the onion and garlic mixture. Cook for an additional 3 minutes to allow the flavors to blend.

4. Add Tomatoes and Beans:
Pour in the can of diced tomatoes (with their juices) and both beans. Stir well to combine all ingredients and evenly distribute everything in the pot.

5. Season the Chili:
Sprinkle in 2 tablespoons chili powder, 1 tablespoon cumin, and 1 teaspoon of your chosen spice blend. Stir to coat the ingredients thoroughly with these aromatic spices.

6. Simmer the Chili:
Add 1 1/2 cups vegetable broth to the pot, stirring everything to mix evenly. Bring the chili to a gentle boil, then reduce the heat to low. Allow it to simmer uncovered for PT30M (about 30 minutes), stirring occasionally.

7. Adjust Seasoning:
Taste the chili and, if needed, add salt and pepper to your liking. For an extra kick of flavor, consider adding a pinch more chili powder or cumin.

8. Serve and Garnish:
Ladle the chili into bowls. If desired, garnish with fresh cilantro and serve with lime wedges on the side for a burst of freshness.
