Spicy Tex-Mex Microwave Quesadilla Extravaganza
Ingredients
- 4 Sprouted grain tortillas
- 1½ cups Shredded rotisserie chicken
- 1 cup Shredded cheese (Cheddar or Monterey Jack)
- 1 cup Old El Paso Tex-Mex Style Pinto Beans, drained
- 1 Small onion, finely chopped
- 1 Clove garlic, minced
- 1 Large tomato, diced
- 1 Jalapeño, seeded and diced
- 1 Bell pepper, sliced
- 1 tsp Paprika
- ½ tsp Chipotle pepper powder
- 2 tbsp Hot sauce (adjust based on spice preference)
- ½ cup Greek yogurt
- ½ cup Sour cream
- 1 cup Cooked rice
- Salsa, for serving
Instructions
1. Prepare the Filling
- In a microwave-safe bowl, combine the shredded rotisserie chicken, Old El Paso Tex-Mex Style Pinto Beans, onion, garlic, diced tomato, jalapeño, bell pepper, paprika, chipotle pepper powder, and hot sauce.
- Stir together until everything is evenly mixed.
- Microwave on high for PT4M (4 minutes), or until onions are softened and heated through.
2. Assemble the Quesadilla
- Lay out one sprouted grain tortilla on a microwave-safe plate.
- On one half of the tortilla, spread ¼ cup of the cooked rice.
- Top with ½ cup of the prepared filling and ¼ cup of shredded cheese.
- Fold the other half of the tortilla over the filled side.
- Repeat with remaining tortillas and ingredients.
3. Cook the Quesadillas
- Place one assembled quesadilla in the microwave.
- Microwave on medium-high power (70%) for PT2M (2 minutes), or until the cheese is melted and the tortilla is hot.
- Repeat with remaining quesadillas.
4. Prepare the Tex-Mex Sauce
- In a small bowl, combine Greek yogurt and sour cream.
- Mix well to create a creamy sauce for dipping.
5. Serve
- Slice each quesadilla into wedges.
- Serve with a side of salsa and the prepared Tex-Mex sauce.
