Spicy Thai Basil Beef with Noodles and Jasmine Rice
Ingredients
- 1 pound ground beef
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 shallot, finely chopped
- 2 tablespoons red curry paste
- 1/4 cup fresh basil leaves, chopped
- 1/4 cup fresh cilantro leaves, chopped
- 1/4 cup fresh mint leaves, chopped
- 1 lime, cut into wedges
- 2 cups steamed jasmine rice
- 2 cups cooked rice noodles
- 8 romaine leaves, washed and patted dry
Instructions
1. Prepare Aromatics:
- Heat a large skillet or wok over medium-high heat. Add the ground beef and cook until browned, breaking it up with a spoon.
- Season the beef with salt and black pepper, then push to one side of the skillet.
2. Sauté Shallots and Add Curry Paste:
- Add the shallot to the cleared side of the skillet and sauté for about 2 minutes until softened.
- Stir in the red curry paste and cook for another 1 minute, until fragrant.
3. Combine and Incorporate Herbs:
- Mix the beef and shallot thoroughly with the curry paste.
- Add the basil, cilantro, and mint, stirring everything together until the herbs are wilted and well mixed, which should take about 1 minute.
4. Assemble the Dish:
- Arrange a bed of steamed jasmine rice and cooked rice noodles on a serving platter.
- Layer the spicy beef mixture over the rice and noodles.
5. Garnish and Serve:
- Serve with fresh romaine leaves on the side, allowing diners to create their own wraps if desired.
- Provide lime wedges for a zesty squeeze before eating.
