Spicy Turkey & Monterey Jack Quesadillas with Avocado Cream Sauce
Ingredients
- 4 medium tortillas
- 8 ounces cooked turkey, shredded
- 1 cup Monterey Jack cheese, shredded
- 2 green onions, finely chopped
- 2 tablespoons butter
- 1/2 cup sour cream
- 1/3 cup spicy southwest ranch dip
- 1/3 cup avocado cream sauce
- 1/3 cup green chile guacamole
Instructions
1. Prepare the Cheese Mixture:
In a medium-sized bowl, combine the shredded Monterey Jack cheese, chopped green onions, and shredded turkey. Toss the ingredients together until well mixed.
2. Assemble the Quesadillas:
Lay out two tortillas on a clean work surface. Evenly distribute half of the cheese and turkey mixture over each tortilla. Place another tortilla on top of each, pressing gently to adhere.
3. Heat the Skillet:
Melt 1 tablespoon of butter in a large non-stick skillet over medium heat.
4. Pan Fry the Quesadillas:
Place one of the assembled quesadillas in the skillet. Cook for about 3-4 minutes on each side until the tortillas are golden brown and the cheese has melted completely. Remove from the pan and repeat with the remaining butter and the second quesadilla.
5. Slice and Serve:
Once cooked, transfer the quesadillas to a cutting board and allow them to cool slightly for about 2 minutes. Using a sharp knife or a pizza cutter, slice each quesadilla into 4 quarters.
6. Plate the Dish:
Arrange the sliced quesadillas on a platter. Serve alongside sour cream, spicy southwest ranch dip, avocado cream sauce, and green chile guacamole for dipping.
