Stir-Fried Chicken Fettuccine Delight with Vegetables
Ingredients
- 8 oz fettuccine pasta
- 1 lb chicken breast, thinly sliced
- 2 tablespoons olive oil
- 1 cup tomato sauce
- 1/2 cup sliced mushrooms
- 1 bell pepper, sliced
- 1 small onion, sliced
- 2 cloves garlic, minced
- 1/4 cup soy sauce
- 1 tablespoon sesame oil
- 1/4 cup panko breadcrumbs
- 1/4 cup parmesan cheese, grated
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions
1. Prepare the Pasta:
- Cook the fettuccine pasta in a large pot of boiling salted water for 8-10 minutes or until al dente.
- Drain the pasta and set aside.
2. Cook the Chicken:
- In a large skillet or wok, heat 1 tablespoon of olive oil over medium-high heat.
- Add the thinly sliced chicken breast. Stir-fry for about 5-7 minutes until fully cooked and browned.
- Remove the chicken from the skillet and set aside.
3. Stir-Fry Vegetables:
- In the same skillet, add the remaining 1 tablespoon olive oil.
- Add sliced mushrooms, bell pepper, onion, and minced garlic. Stir-fry for 3-4 minutes until the vegetables are tender.
4. Combine Ingredients:
- Return the cooked chicken to the skillet with the vegetables.
- Pour in the tomato sauce, soy sauce, and sesame oil. Stir to combine all ingredients.
- Add the cooked fettuccine to the skillet. Toss well to ensure the pasta is coated with the sauce.
5. Add Toppings and Serve:
- Sprinkle the parmesan cheese and panko breadcrumbs over the top.
- Season with salt and pepper to taste and toss everything lightly.
- Garnish with fresh parsley before serving.
