Stir-Fried Ramen with Ginger-Soy Glazed Vegetables
Ingredients
- 8 oz Ramen noodles
- 3 tablespoons Soy sauce
- 2 tablespoons Sesame oil
- 2 tablespoons Brown sugar
- 1 teaspoon Red pepper flakes
- 1 cup Water
- 1 tablespoon Rice vinegar

- 1 tablespoon Fresh ginger, minced
- 3 cloves Garlic, minced
- 4 Green onions, chopped (reserve some for garnish)
- 1 tablespoon Sesame seeds (optional for garnish)
- 2 Scallions, chopped
- 1 cup Shredded carrots
- 1 bag (14 oz) Coleslaw mix
- 1/2 cup Peas
- 1/2 cup Baby corn, sliced
- 1/2 cup Chopped water chestnuts
- 1 cup Kale, chopped
- 1/4 cup Chopped peanuts (optional for garnish)
Instructions
1. Prep the Ingredients: Begin by preparing all vegetables. Chop the green onions, scallions, and kale; slice the baby corn and ginger. Mince the garlic.
2. Cook the Ramen Noodles: In a large pot, bring water to a boil. Add ramen noodles and cook for 3 minutes until tender. Drain and set aside.
3. Prepare the Stir-Fry Sauce: In a small bowl, whisk together soy sauce, sesame oil, brown sugar, red pepper flakes, rice vinegar, and water until the sugar is dissolved.
4. Heat the Oil: In a large skillet or wok, heat the oil over medium-high heat. Add the minced ginger and garlic, stirring frequently until fragrant, about 1 minute.
5. Cook the Vegetables: Add the green onions, scallions, shredded carrots, coleslaw mix, peas, baby corn, and water chestnuts to the skillet. Stir-fry for 5–7 minutes until the vegetables are slightly tender but still vibrant.
6. Combine Everything: Add the cooked ramen noodles and kale to the vegetable mix. Pour the stir-fry sauce over the mixture, tossing everything together until the noodles and vegetables are evenly coated with the sauce. Cook for an additional 2-3 minutes to combine flavors thoroughly.
7. Garnish and Serve: Transfer the stir-fry to a serving platter or bowls. Garnish with sesame seeds, chopped peanuts, and reserved green onions. Serve immediately.
