Stove-Top Asian Fusion Stir-Fry Delight



Ingredients



- 1 small head of cabbage, thinly sliced
- 2 medium carrots, julienned
- 3 radishes, thinly sliced
- 1/4 cup chives, chopped
- 1/4 cup low-sodium soy sauce
- 2 tablespoons tamari
- 2 tablespoons sesame oil
- 1 tablespoon sriracha
- 1 cup kimchi, drained and chopped
- 8 ounces organic baked teriyaki tofu, cubed
- 4 cups vegetable fried rice, prepared
- 1 cup vegetable stock
- 1 large onion, sliced
- 3 garlic cloves, minced
- 2 cups baby spinach
- 1/4 cup spicy mayo
- 1/4 cup peanut sauce

Instructions



1. Prepare the Ingredients:
- Slice the cabbage, julienne the carrots, and thinly slice the radishes.
- Chop the chives and cube the teriyaki tofu.
- Slice the onion and mince the garlic.

2. Sauté the Aromatics:
- Heat 1 tablespoon of sesame oil in a large skillet over medium heat.
- Add the sliced onion and minced garlic, sauté until the onion is translucent, about PT5M (5 minutes).

3. Cook the Vegetables:
- Add the carrots, radishes, and cabbage to the skillet. Stir well.
- Pour in 1/2 of the vegetable stock. Cover and let steam for PT7M (7 minutes) or until the veggies are tender.

4. Combine the Sauces:
- In a small bowl, whisk together the low-sodium soy sauce, tamari, and sriracha.

5. Stir-Fry the Tofu and Add Kimchi:
- Push the veggies to the side of the skillet.
- Add the remaining sesame oil and the cubed teriyaki tofu, cooking until golden, about PT3M (3 minutes).
- Stir in the kimchi and the prepared sauce, mixing everything together.

6. Integrate Rice and Spinach:
- Add the vegetable fried rice to the skillet, along with the remaining vegetable stock.
- Toss in the baby spinach and cook, stirring constantly, until the spinach wilts and rice is heated through, about PT5M (5 minutes).

7. Finish and Garnish:
- Remove from heat and mix in the chives.
- Drizzle with spicy mayo and peanut sauce just before serving.
