Stove-Top Bacon and Veggie Scramble
Ingredients
- 6 large eggs
- 4 strips of bacon, chopped
- 1 medium apple, peeled, cored, and diced
- 2 stalks of celery, sliced
- 1 red bell pepper, diced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
- 1/4 cup shredded cheddar cheese (optional)
Instructions
1. Prepare the Ingredients:
Begin by prepping all the ingredients. Dice the apple, celery, and red bell pepper into small, even pieces. Set them aside.
2. Cook the Bacon:
Place a large skillet on the stove over medium heat. Add the chopped bacon and cook for about 5-7 minutes until it's crispy. Use a slotted spoon to transfer the cooked bacon to a paper towel-lined plate, leaving the bacon drippings in the skillet.
3. Sauté the Vegetables:
Add 1 tablespoon of olive oil to the skillet with the bacon drippings. Toss in the diced apples, celery, and red bell pepper. Sauté for 5-6 minutes until the vegetables are softened and the apples are slightly caramelized.
4. Scramble the Eggs:
In a medium bowl, whisk together the eggs with salt and black pepper. Pour the eggs into the skillet with the sautéed vegetables. Gently stir the mixture with a spatula, folding the eggs over themselves as they cook for about 3-4 minutes, until they are just set.
5. Combine and Serve:
Add the crispy bacon back to the skillet and mix until everything is evenly distributed. If using, sprinkle cheddar cheese over the top and allow it to melt before serving.
6. Plate and Enjoy:
Slide the scramble onto a large serving plate and divide into portions. Serve it hot for a delightful, protein-packed lunch.
