Stove-Top Basil Pesto Linguine Delight
Ingredients
- 2 cups fresh basil leaves
- 1/2 cup extra virgin olive oil
- 1/4 cup pine nuts
- 1/2 cup freshly grated Parmesan cheese
- 3 cloves garlic, peeled
- 12 oz linguine
- Salt, to taste
- Black pepper, to taste
Instructions
1. Prepare the Basil Pesto:
- In a food processor, combine the fresh basil leaves, peeled garlic cloves, and pine nuts. Pulse until coarsely chopped.
- Gradually add 1/2 cup of extra virgin olive oil in a steady stream while the processor is running until the mixture is smooth.
- Add the grated Parmesan cheese and pulse a few more times until combined. Season with salt and black pepper to taste.
2. Cook the Linguine:
- In a large pot, bring salted water to a boil over high heat. Once boiling, add the linguine and cook according to package instructions until al dente, approximately PT10M (10 minutes).
- Reserve 1/2 cup of pasta water and drain the linguine in a colander. Set aside.
3. Combine and Serve:
- In the same pot over low heat, return the drained linguine. Add the prepared basil pesto and toss to coat thoroughly.
- If the sauce is too thick, gradually add the reserved pasta cooking water, a tablespoon at a time, until the desired consistency is achieved.
- Taste and adjust seasoning if needed.
