Stove-Top Cheesy Bean and Avocado Burritos

Ingredients

- 1 can Casa Mamita Refried Beans (15 oz)
- 4 whole grain tortillas
- 1 cup shredded cheese (Cheddar or Monterey Jack)
- 2 medium tomatoes, diced
- 1 medium onion, diced
- 1/2 cup sour cream
- 1/2 cup Greek yogurt
- 1 ripe avocado, sliced
- 1 teaspoon salt
- 1 tablespoon lime juice
- 1 tablespoon hot sauce

Instructions

1. Prepare Ingredients: Begin by dicing the tomatoes and onion. Slice the avocado and set it aside. In a small bowl, mix together sour cream, Greek yogurt, lime juice, and a pinch of salt. This will be your creamy sauce.

2. Heat Tortillas: Preheat a large skillet over medium heat. Place a whole grain tortilla in the skillet for about 30 seconds on each side, until they are warm and pliable. Set aside and keep covered with a towel to maintain warmth.

3. Cook Onions: In the same skillet, add the diced onions with a small drizzle of olive oil. Sauté for about 3 minutes, or until the onions become translucent.

4. Warm the Beans: Add the Casa Mamita Refried Beans to the skillet with the onions. Stir to combine and cook for 5 minutes, allowing the beans to heat through.

5. Assemble Burritos: Place a warmed tortilla on a flat surface. Spread a generous spoonful of refried beans mixture onto the center. Sprinkle about 1/4 cup of shredded cheese on top.

6. Add Fresh Ingredients: Top with some diced tomatoes, a few slices of avocado, and a drizzle of the creamy sauce. Add a few drops of hot sauce for heat, adjusting to your taste preference.

7. Wrap: Fold in the sides of the tortilla, then roll it up tightly from the bottom to make a burrito.

8. Melt Cheese: Place the burrito back on the skillet seam-side down for about 1 minute to melt the cheese and seal the burrito. Turn to slightly toast the other side.

9. Serve: Repeat steps for the remaining tortillas. Serve immediately with extra sauce, sliced avocado, and lime wedges.
