Stove-Top Garlic Parsley Pesto Pasta
Ingredients
- 1 cup fresh parsley leaves, packed
- 1/3 cup pine nuts
- 1/2 cup grated Parmesan cheese
- 3 cloves garlic, minced
- 1/2 teaspoon salt
- 1/2 cup olive oil
- 1 pound pasta of choice
Instructions
1. Prepare the Parsley Pesto:
- In a food processor, combine 1 cup of fresh parsley leaves, 1/3 cup pine nuts, 1/2 cup grated Parmesan cheese, 3 minced garlic cloves, and 1/2 teaspoon salt. Pulse until finely chopped.
- With the food processor running, slowly drizzle in 1/2 cup of olive oil until the mixture is smooth and emulsified. Scrape down the sides with a spatula if necessary.
2. Cook the Pasta:
- In a large pot, bring salted water to a boil over high heat.
- Add 1 pound of your chosen pasta and cook according to the package instructions until al dente, about 8-10 minutes.
- Reserve 1 cup of the pasta cooking water and drain the rest.
3. Combine Pesto and Pasta:
- Return the drained pasta to the pot over low heat.
- Add the freshly made parsley pesto and toss to coat the pasta evenly.
- If necessary, add a bit of the reserved pasta water to achieve a creamy consistency.
4. Serve and Enjoy:
- Taste and adjust seasoning if needed. Serve hot, garnished with additional grated Parmesan cheese and a sprinkle of chopped parsley if desired.
