Stove-Top Greek Fusion Bowls with Herbed Yogurt Sauce
Ingredients
- 1 pound ground beef
- 1 (14 ounces) can dolmas, drained and sliced
- 1 (14.5 ounces) can diced tomatoes, drained
- 4 large pita breads
- 1 cup white rice
- 1 cup Greek yogurt
- 2 tablespoons fresh dill, chopped
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh cilantro, chopped
- 1 teaspoon ground cumin
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
1. Prepare the Rice:
- Cook 1 cup of white rice according to package instructions. Set aside.
2. Sauté Ground Beef:
- In a large skillet over medium heat, add 2 tablespoons of olive oil.
- Once hot, add the ground beef. Cook for approximately PT10M (10 minutes), breaking it apart with a spoon, until browned.
- Add 1 teaspoon ground cumin, salt, and pepper to taste. Stir well.
3. Add Vegetables:
- Stir in the drained and sliced dolmas and the diced tomatoes.
- Cook for an additional PT5M (5 minutes) until heated through.
- Mix in the cooked rice, stirring to combine. Cook for an additional PT2M (2 minutes) to warm everything together.
4. Prepare Herbed Yogurt Sauce:
- In a small bowl, combine 1 cup Greek yogurt with the fresh dill, parsley, and cilantro.
- Mix well and season with salt and pepper to taste.
5. Warm the Pita:
- While the beef mixture is finishing, warm the pita breads on a dry skillet over medium heat for PT1M per side (1 minute per side).
6. Assemble the Bowls:
- Place a warmed pita bread into each serving bowl.
- Spoon a generous amount of the beef and rice mixture over the pita.
- Top with a dollop of herbed yogurt sauce.
