Stove-Top Lemon Tuna with Cannellini Beans
Ingredients
- 2 cans of tuna in water, drained (5 oz each)
- 1 can of cannellini beans, rinsed and drained (15 oz)
- 1 medium onion, finely chopped
- 2 tablespoons lemon juice
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Fresh parsley for garnish (optional)
Instructions
1. Prep the Ingredients: Drain the tuna and cannellini beans. Finely chop the onion.
2. Sauté the Onion: In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes.
3. Combine Tuna and Beans: Add the drained tuna and cannellini beans to the skillet. Stir gently to combine, taking care not to break up the beans too much.
4. Season and Flavor: Pour 2 tablespoons of lemon juice over the tuna and bean mixture. Season with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper. Stir to ensure everything is well coated.
5. Finish the Dish: Reduce heat to low and let the mixture simmer for another 2-3 minutes, allowing the flavors to meld.
6. Serve: Transfer the mixture to a serving dish. Garnish with fresh parsley, if desired. Serve warm or at room temperature.
