Stove-Top Loaded Potato Chowder



Ingredients



- 6 slices bacon
- 1 large yellow onion, diced
- 3 cloves garlic, minced
- 4 medium russet potatoes, peeled and diced
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 4 cups chicken broth
- 1 cup sharp cheddar cheese, shredded
- 1 cup heavy whipping cream
- 1/2 cup sour cream
- 1/4 cup green onions, thinly sliced

Instructions



1. Cook the Bacon:
- Place the bacon slices in a large pot or Dutch oven.
- Cook over medium heat until the bacon is crispy, about 6 minutes. Remove bacon and set aside on a paper towel-lined plate. Leave the drippings in the pot.

2. Sauté the Vegetables:
- Add the diced yellow onion to the bacon drippings in the pot. Cook for approximately 5 minutes until the onion is soft and translucent.
- Stir in the minced garlic and sauté for an additional 1 minute until fragrant.

3. Cook the Potatoes:
- Add the diced russet potatoes to the pot. Season with kosher salt and black pepper, stirring thoroughly to coat the potatoes with the onion and garlic mixture.

4. Simmer the Chowder:
- Pour in the chicken broth, ensuring the potatoes are fully submerged. Bring the mixture to a gentle boil.
- Reduce the heat to low, cover the pot, and let it simmer for 20 minutes, or until the potatoes are tender.

5. Blend and Thicken:
- Using an immersion blender, partially blend the chowder until it reaches your desired consistency. This will thicken the chowder while keeping some potato chunks intact.
- Stir in the shredded sharp cheddar cheese, heavy whipping cream, and sour cream until fully incorporated and smooth. Heat for an additional 5 minutes to meld flavors.

6. Serve:
- Crumble the cooked bacon and stir it into the chowder, reserving some for garnish.
- Ladle the hot chowder into bowls, garnish with sliced green onions and reserved bacon crumbles.
