Stove-Top Ribeye Steaks with Garlic-Herb Butter and Parmesan Smashed Potatoes

- Ribeye steak - 4 (1-inch thick) steaks
- Garlic - 8 cloves, minced
- Parmesan cheese - 1 cup, grated
- Potatoes - 4 large, peeled and quartered
- Butter - 1/2 cup, softened
- Fresh rosemary - 2 tablespoons, finely chopped
- Spinach - 1 cup, chopped
- Lemon - 1, zested and juiced
- Salt - to taste
- Black pepper - to taste

- Fresh parsley (optional) - chopped

Instructions



1. Prepare Garlic-Herb Butter: In a small bowl, combine 1/2 cup softened butter, minced garlic, and fresh rosemary. Add lemon zest and a pinch of salt. Mix well and set aside.

2. Cook Parmesan Smashed Potatoes:
- Place quartered potatoes in a large pot filled with water. Add a pinch of salt. Bring to a boil over medium-high heat and cook until tender, about PT20M (20 minutes).
- Drain the potatoes and return to the pot. Add in Parmesan cheese, 2 tablespoons of the garlic-herb butter, and chopped spinach. Smash the potatoes using a potato masher or fork until slightly chunky and well combined. Season with salt and pepper to taste. Set aside and keep warm.

3. Cook the Ribeye Steaks:
- Season ribeye steaks on both sides with salt and black pepper. Heat a large stovetop skillet over medium-high heat until hot.
- Add 2 tablespoons of the garlic-herb butter to the skillet. Once melted and hot, place the steaks in the skillet. Cook each side for about PT4M (4 minutes) for medium-rare or adjust the time according to your preferred doneness level.
- During the last 2 minutes of cooking, add a final tablespoon of the garlic-herb butter to the skillet, basting the steaks occasionally.

4. Rest Steaks: Once cooked, transfer the steaks to a plate and let them rest for PT5M (5 minutes) to allow juices to redistribute.

5. Assemble and Serve: Arrange each ribeye steak on a dinner plate with a generous portion of Parmesan smashed potatoes on the side. Drizzle any extra juices from the skillet over the steaks. Sprinkle with chopped parsley if desired.
