Stove-Top Sautéed Cucumber Delight
Ingredients
- 2 medium cucumbers, peeled and sliced into 1/4-inch rounds
- 2 tablespoons olive oil
- 1 teaspoon sesame oil
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon rice vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon red pepper flakes (optional)
- 1 tablespoon toasted sesame seeds
- 2 green onions, thinly sliced for garnish
Instructions
1. Prepare the Cucumbers:
Slice the cucumbers into 1/4-inch thick rounds. Set them aside.
2. Heat the Oils:
In a large skillet over medium heat, combine the olive oil and sesame oil. Heat until the oils are shimmering.
3. Sauté the Garlic:
Add the minced garlic to the skillet and sauté for about 1 minute, or until it becomes fragrant and starts to turn golden brown.
4. Add the Cucumbers:
Increase the heat to medium-high. Add the sliced cucumbers to the skillet, spreading them out in an even layer. Cook for 3-5 minutes, allowing them to turn slightly translucent while maintaining a slight crunch.
5. Season the Cucumbers:
Drizzle the soy sauce and rice vinegar over the cucumbers. Sprinkle with salt, black pepper, and red pepper flakes if using. Stir to coat the cucumbers evenly with the seasoning.
6. Toast and Finish:
Continue to cook for another 2-3 minutes, stirring occasionally until the cucumbers are heated through. Sprinkle toasted sesame seeds over the top for added flavor and texture.
7. Garnish and Serve:
Remove from heat. Garnish with sliced green onions before serving. Enjoy this delightful snack warm.
