Stove-Top Skipjack Tuna and Capers Pasta Delight



Ingredients



- 2 Skipjack tuna fillets (approximately 8 oz total)
- 4 tablespoons olive oil
- 2 tablespoons lemon juice
- 1/2 cup crushed crackers (plain or seasoned)
- 8 oz spaghetti
- 1/2 cup canned white beans, rinsed and drained
- 2 tablespoons capers, drained
- 2 anchovy fillets, finely chopped
- 1/4 cup mayonnaise
- 2 tablespoons relish
- 1/2 cup sharp cheddar cheese, grated
- 8 oz egg noodles
- Salt, to taste

Instructions



1. Prepare the Pasta:
- Cook spaghetti and egg noodles separately as per package instructions in salted boiling water. Drain and set aside.
- Estimated time: PT10M (10 minutes).

2. Prepare the Fried Tuna:
- Season skipjack tuna fillets with salt.
- Heat 2 tablespoons of olive oil in a skillet over medium-high heat.
- Add the tuna fillets and sear for 2-3 minutes on each side until golden brown and cooked through.
- Break the cooked tuna into large chunks and set aside.
- Estimated time: PT8M (8 minutes).

3. Create the Sauce:
- In the same skillet, reduce the heat to medium, add 2 more tablespoons of olive oil.
- Stir in the anchovies, allowing them to dissolve into the oil.
- Add the capers and cook for 2 minutes, stirring occasionally.
- Mix in the crushed crackers and toast them lightly for 1 minute.
- Stir in the white beans, mayonnaise, relish, and lemon juice. Simmer for an additional 2 minutes until the mixture is well-combined and heated through.

4. Assemble the Dish:
- Add both the spaghetti and egg noodles to the skillet, tossing gently to coat in the sauce.
- Fold in the tuna chunks, ensuring an even distribution throughout the pasta.
- Sprinkle grated sharp cheddar cheese over the top, then cover with a lid for 30 seconds until the cheese melts.
- Serve immediately.
