Stove-Top Southwest Chicken and Veggie Skillet



Ingredients


- 1 pound chicken breast, cut into bite-sized pieces
- 2 medium sweet potatoes, peeled and diced
- 1 cup canned or fresh beans (black or pinto), rinsed and drained
- 1 cup shredded cheese (cheddar or Monterey Jack)
- 2 sausages, sliced into rounds
- 2 bell peppers, sliced (any color)
- 1 avocado, diced
- 1/2 cup pickled onions
- 2 veggie burgers, crumbled
- 2 tablespoons hot sauce
- 1 cup slaw mix
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil

Instructions


1. Prepare Ingredients: Begin by preparing all ingredients. Dice the chicken, sweet potatoes, and avocado; slice the sausages and bell peppers; rinse and drain the beans; and crumble the veggie burgers.

2. Sauté Sweet Potatoes: In a large non-stick skillet over medium heat, add 1 tablespoon of olive oil. Sauté the diced sweet potatoes for about 10 minutes until they start to soften, stirring occasionally.

3. Cook Chicken: Push sweet potatoes to one side of the skillet. Add the remaining olive oil and the chicken pieces. Cook for an additional 7 minutes or until the chicken is browned and cooked through.

4. Add Sausages and Veggie Burgers: Stir in the sausage slices and crumbled veggie burgers. Cook for 5 minutes until sausages are browned.

5. Incorporate Peppers and Beans: Add the bell peppers and beans to the skillet. Sprinkle with salt and black pepper. Stir everything together and cook for about 5 minutes until the peppers are tender-crisp.

6. Melt Cheese: Reduce heat to low. Sprinkle the cheese evenly over the mixture in the skillet. Cover and let it melt for about 3 minutes.

7. Add Finishing Touches: Drizzle hot sauce over the top. Garnish with avocado, pickled onions, and slaw mix before serving. Mix slightly to incorporate flavors.
