Stove-Top Tomato and Cucumber Relish with Vidalia Onions
Ingredients
- 4 large ripe tomatoes, chopped
- 2 medium cucumbers, peeled and diced
- 1 large Vidalia onion, finely chopped
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/2 cup distilled white vinegar
- 3 tablespoons brown sugar
Instructions
1. Prepare the Vegetables
Begin by washing the tomatoes and cucumbers thoroughly. Chop the tomatoes into small cubes and peel and dice the cucumbers. Finely chop the Vidalia onion. Set all the chopped vegetables aside.
2. Heat the Ingredients
Utilize a medium-sized saucepan over medium heat on the stove. Add the chopped tomatoes, cucumbers, and Vidalia onion to the saucepan.
3. Season the Mixture
Sprinkle the kosher salt and black pepper over the vegetables. Stir gently to ensure the seasoning is evenly distributed.
4. Add Vinegar and Sugar
Pour in the distilled white vinegar, followed by the brown sugar. Stir continuously until the sugar has dissolved and the ingredients are well combined.
5. Cook the Relish
Allow the mixture to come to a gentle boil, then reduce the heat to low. Simmer uncovered, stirring occasionally, for 20 minutes and letting the flavors meld together and the vegetables soften slightly.
6. Adjust the Seasoning
Taste and adjust seasoning if necessary, adding more salt or pepper to suit your preference.
7. Cool and Serve
Remove from heat and let the relish cool for a few minutes. Serve warm or at room temperature as a tangy accompaniment to your lunch.
