Stove-Top Vanilla Caramel Cream Pie



Ingredients



1 pre-made pie shell
1 can (12 ounces) evaporated milk
1 cup brown sugar
2 tablespoons cornstarch
3 egg yolks
1 teaspoon vanilla extract
1/4 teaspoon salt
2 tablespoons margarine or butter
3 egg whites
6 tablespoons sugar

Instructions



1. Prepare the Pie Shell:
- Pre-bake the pie shell according to the package instructions. Allow it to cool completely before filling.

2. Make the Caramel Cream Filling:
- In a medium saucepan, combine the evaporated milk, brown sugar, and cornstarch.
- Whisk the mixture over medium heat until the sugar dissolves and the mixture starts to thicken. This should take about 5 minutes.

3. Temper the Egg Yolks:
- In a separate bowl, beat the egg yolks lightly.
- Gradually add a small amount of the hot milk mixture to the yolks, whisking constantly to temper the yolks without cooking them.

4. Combine and Cook the Mixture:
- Return the tempered yolks to the saucepan with the remaining milk mixture.
- Cook over low heat, stirring constantly, until the mixture is thickened and bubbly, approximately 3 minutes.
- Remove from heat and stir in the vanilla extract, salt, and margarine or butter until smooth and well combined.

5. Prepare the Meringue Topping:
- In a clean mixing bowl, beat the egg whites on high speed until soft peaks form.
- Gradually add the sugar, continuing to beat until stiff, glossy peaks form.

6. Assemble the Pie:
- Pour the hot caramel cream filling into the cooled pie shell.
- Spoon the meringue over the filling, spreading it to the edges of the crust to seal.

7. Finish the Pie:
- Place the pie under a broiler for about 1-2 minutes or until the meringue is lightly browned. Keep a close watch to avoid burning.
- Allow the pie to cool for at least 1 hour before serving to set the filling.
- For best results, chill in the refrigerator for an additional hour before slicing.
