Stovetop Burrata & Summer Harvest Salad
Ingredients
- 2 cups spring greens mix
- 1 cup arugula
- 1/2 cup spinach
- 1/2 cup kale, finely chopped
- 1/4 cup fresh basil leaves
- 1 ball burrata cheese
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, thinly sliced
- 1/2 cup sliced peaches
- 1/2 cup strawberries, hulled and halved
- 1/2 cup blueberries
- 4 figs, quartered
- 1/4 cup dried cranberries
- 1/4 cup pine nuts
- 1/4 cup pickled red onions
- 1/4 cup pickled asparagus, cut into bite-sized pieces
- 1/4 cup pickled green beans, cut into bite-sized pieces
- 2 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- 2 tablespoons pesto
- Drizzle of balsamic glaze
Instructions
1. Prepare the Salad Base:
- In a large mixing bowl, combine the spring greens, arugula, spinach, and kale. Toss gently to mix.
2. Roast Pine Nuts:
- In a small skillet over a stove, heat on low and add pine nuts. Toast for approximately 5 minutes (PT5M), stirring occasionally until pine nuts are golden brown and fragrant. Remove from heat and set aside to cool.
3. Prepare Fresh Fruits & Vegetables:
- Add the cherry tomatoes, red onion, sliced peaches, strawberries, blueberries, and figs to the green mixture. Toss gently.
4. Combine Pickled Ingredients:
- Add pickled red onions, asparagus, and green beans to the salad. Incorporate the dried cranberries.
5. Dress the Salad:
- In a small bowl, whisk together olive oil, balsamic vinegar, and pesto. Drizzle over the salad and toss everything gently to ensure even distribution of the dressing.
6. Assemble the Salad:
- Transfer the salad to a large serving platter. Tear the burrata gently into pieces and place them over the salad.
7. Garnish:
- Sprinkle the toasted pine nuts across the salad. Add a drizzle of balsamic glaze over the top and finish with fresh basil leaves.
8. Serve Immediately:
- Enjoy your gourmet salad immediately while fresh for the best texture and flavor.
