Stovetop Falafel Burger Pita with Refreshing Tzatziki
Ingredients
- Falafel Burgers:
4 falafel patties
- Vegetables and Herbs:
2 ripe tomatoes, sliced
1 cucumber, sliced
1/4 cup fresh cilantro, chopped
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
- Dairy:
1/2 cup crumbled feta cheese
- Pita and Spread:
8 whole wheat pita pockets
1 cup hummus
- Seasonings:
1 teaspoon paprika
- Garnish and Accompaniments:
1 lemon, cut into wedges
Instructions
1. Prepare the Vegetables and Herbs:
Begin by slicing the tomatoes and cucumber into thin, even slices. Set them aside in a bowl. Chop cilantro, parsley, and mint finely and combine in a separate bowl.
2. Prepare the Falafel Patties:
Heat a non-stick skillet over medium heat. Once hot, place the falafel patties onto the skillet. Cook each side for about 4 minutes, or until they are golden brown and heated through. This should take approximately PT8M (8 minutes).
3. Prepare the Tzatziki-Style Spread:
In a small bowl, mix hummus with paprika. Add a few drops of lemon juice and thoroughly mix to incorporate flavors. This will serve as a creamy and tangy spread for the pita.
4. Assemble the Pitas:
Slice open each pita pocket to form a half-moon. Spread approximately 2 tablespoons of the hummus mixture inside each pita.
5. Add Toppings:
Place one falafel patty inside each prepared pita pocket. Top the falafel with a layer of cucumber and tomato slices. Sprinkle a generous amount of feta cheese over the vegetables.
6. Finish with Herbs and Serve:
Add a handful of the chopped herb mix to each pita for an aromatic finish. Serve with fresh lemon wedges on the side to drizzle over before eating.
