Stovetop Fiesta Chili with Fritos
Ingredients
- 1 pound ground beef
- 1 teaspoon kosher salt
- 1 medium onion, finely chopped
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 3 cloves garlic, minced
- 2 tablespoons chili powder
- 2 tablespoons taco seasoning
- 1 can (28 ounces) crushed tomatoes
- 1 can (15 ounces) kidney beans, drained and rinsed
- 1 cup water
- 2 cups low-sodium chicken broth
- 1 cup shredded cheddar cheese
- 1 cup sour cream
- 2 cups Fritos
Instructions
1. Prepare Ingredients: Begin by prepping all your ingredients. Finely chop the onion and dice the red and green bell peppers. Mince the garlic cloves.
2. Cook Beef: In a large pot over medium-high heat, add the ground beef and kosher salt. Cook, stirring occasionally, until the beef is well-browned, about 7 minutes. Drain any excess fat.
3. Add Vegetables: Reduce heat to medium. Add the chopped onion, red bell pepper, green bell pepper, and minced garlic to the pot. Cook for another 5 minutes until the vegetables soften.
4. Season the Mix: Stir in the chili powder and taco seasoning, ensuring the beef and vegetables are evenly coated. Cook for 1 minute to release the spices' aromas.
5. Add Liquids: Pour in the crushed tomatoes, kidney beans, water, and chicken broth. Stir well to combine all ingredients.
6. Simmer the Chili: Bring the mixture to a gentle simmer. Cover the pot, reduce heat to low, and let it simmer for 30 minutes, stirring occasionally. This will allow the flavors to meld beautifully.
7. Finish & Serve: Once the chili is thick and fragrant, remove it from heat. Serve hot in bowls, topped with a generous sprinkle of shredded cheddar cheese, a dollop of sour cream, and a handful of Fritos for that perfect crunch.
