Stovetop Pork Shoulder Verde: A Savory Dinner Delight
Ingredients
- 2 pounds boneless pork shoulder, cut into 2-inch cubes
- 2 tablespoons olive oil
- 1 tablespoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 large yellow onion, chopped
- 6 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 cup water
- 1 tablespoon chicken base
- 1 pound fresh tomatillos, husked and quartered
- 2 fresh poblano chiles, seeded and chopped
- 2 fresh jalapeno peppers, seeded and chopped
- 1 bunch fresh cilantro, leaves and tender stems, chopped
Instructions
1. Prepare the Pork:
In a large bowl, combine the pork shoulder cubes with 1 tablespoon of kosher salt and 1 teaspoon of freshly ground black pepper, ensuring even seasoning.
2. Brown the Pork:
Heat 2 tablespoons of olive oil in a large, heavy-bottomed pot over medium-high heat. Add the pork cubes in batches, searing each side until golden brown, about 3 minutes per side. Remove pork and set aside.
3. Sauté Aromatics:
In the same pot, reduce heat to medium and add the chopped yellow onion. Cook until soft and translucent, about 5 minutes. Stir in the minced garlic, ground cumin, and dried oregano, cooking for an additional 2 minutes until fragrant.
4. Build the Base:
Add the water and chicken base, stirring to dissolve the chicken base. Increase heat to bring to a gentle simmer.
5. Add Vegetables:
Introduce the tomatillos, poblano chiles, and jalapeno peppers to the simmering pot. Return the browned pork to the pot as well, stirring to combine all ingredients.
6. Simmer the Stew:
Cover the pot and reduce the heat to low. Allow the stew to simmer gently for approximately 1 hour, stirring occasionally, until the pork reaches fork-tender perfection.
7. Finish with Freshness:
Once the pork is tender, stir in the chopped fresh cilantro, reserving some for garnish. Cook for an additional 5 minutes to meld flavors.
8. Serve:
Serve hot, garnished with the remaining cilantro and enjoy your Stovetop Pork Shoulder Verde with rice, tortillas, or your preferred side.
