Ingredients

Instructions
1. Prepare the Ingredients:
Start by mincing the garlic, dicing the red onion, and bell pepper. Set these ingredients aside separately.
2. Brown the Beef:
In a large skillet or deep saucepan, heat the olive oil over medium heat. Add the garlic, red onion, and bell pepper. Sauté for about 5 minutes until they start to soften. 3. Simmer the Sauce:
Pour in the beef broth, marinara sauce, and fire-roasted diced tomatoes. Stir in the Parmesan rind. Bring the mixture to a gentle simmer, reducing the heat to low. Allow it to simmer uncovered for about 10 minutes to let the flavors meld together.
4. Cook the Noodles:
Add the broken lasagna noodles into the simmering sauce. Stir to ensure the noodles are submerged and evenly distributed. Cover the skillet and let the noodles cook, stirring occasionally, for about 12-15 minutes until they are tender. Remove the Parmesan rind and discard.
5. Prepare the Ricotta Mixture:
While the noodles cook, mix the ricotta cheese in a bowl with fresh oregano, parsley, and basil. Add a pinch of salt and pepper to taste.
6. Assemble the Lasagna:
Once the noodles are done, remove the skillet from heat. Gently swirl in the herb ricotta mixture until it is incorporated throughout the lasagna.
