Ingredients



- 1 cup fresh strawberries, hulled and sliced
- 4 large egg whites
- 1/2 cup granulated sugar, divided
- 1 tbsp unsalted butter

Instructions



1. Prepare the Strawberries:
- Place the sliced strawberries into a medium saucepan.
- Add 1/4 cup of granulated sugar to the strawberries.
- Cook over medium heat, stirring occasionally, until the strawberries break down and create a syrupy consistency. This should take about 7 minutes. Set aside to cool.

2. Prepare the Soufflé Base:
- In a large mixing bowl, add the egg whites.
- Using an electric mixer, beat the egg whites on medium speed until soft peaks form.
- Gradually add the remaining 1/4 cup of sugar, continuing to beat until the egg whites reach stiff peaks.

3. Incorporate Strawberries:
- Gently fold the cooled strawberry mixture into the egg whites using a spatula. Ensure that the mixture is well combined without deflating the egg whites.

4. Prepare the Cookware:
- Grease a medium-sized oven-safe skillet or deep frying pan with the unsalted butter, ensuring to coat the sides as well.

5. Cook the Soufflé:
- Pour the strawberry-egg white mixture into the prepared skillet.
- Cover with a lid, and cook over low heat for about 12 minutes, or until the soufflé has risen and the top appears set.

6. Caramelize the Top:
- Preheat your stove's broiler function.
- Transfer the skillet (if oven-safe) to the broiler, leaving the oven door slightly ajar.
- Broil for 1-2 minutes, just until the top is lightly caramelized and golden.

7. Serve:
- Remove from the broiler and let rest for 1 minute before serving.
- Serve immediately for the best texture and flavor.
