Strawberry-Cucumber Mint Balsamic Glaze
Ingredients
- 1 pint strawberries, hulled and halved
- 1 large cucumber, peeled and sliced
- 1/4 cup fresh mint leaves, roughly chopped
- 1/2 cup balsamic vinegar
- 2 tablespoons honey
Instructions
1. Prepare the Strawberries and Cucumbers
Place the strawberries, cucumber slices, and chopped mint leaves in a large mixing bowl. Gently toss to combine, ensuring even distribution of ingredients. Set aside.
2. Make the Balsamic Glaze
In a small saucepan over medium heat, combine the balsamic vinegar and honey. Stir continuously until the mixture begins to bubble. Continue simmering for about 5 minutes until the glaze thickens and reduces by half. Remove from heat and allow to cool slightly.
3. Combine and Serve
Pour the slightly cooled balsamic glaze over the strawberry-cucumber mixture. Gently toss to ensure the ingredients are well coated in the glaze. Allow the flavors to meld for about 5 minutes.
4. Plate and Garnish
Transfer the mixture to a serving dish, spreading out the strawberries and cucumbers evenly. Garnish with additional mint leaves if desired.
