Strawberry Delight Cream Pie
Ingredients
- 3 cups fresh strawberries, hulled and sliced
- 1 cup vanilla wafers, crushed
- 3/4 cup sugar
- 1/4 teaspoon salt
- 1/4 cup all-purpose flour
- 1 1/2 cups milk
- 1/2 cup evaporated milk
- 3 large egg yolks, beaten

Instructions
1. Prepare the Crust:
- Preheat your oven to 350°F (175°C).
- In a medium bowl, combine 1 cup of crushed vanilla wafers with 2 tablespoons sugar and 1/4 teaspoon salt.
- Press the mixture firmly into the bottom and up the sides of a 9-inch pie pan. Set aside for later use.
2. Cook the Filling:
- In a medium saucepan, whisk together 1/4 cup all-purpose flour and 3/4 cup sugar.
- Gradually whisk in 1 1/2 cups milk and 1/2 cup evaporated milk until well combined.
- Cook over medium heat, stirring constantly, until the mixture thickens, about PT10M (10 minutes).
- Remove from heat immediately.
3. Temper the Eggs:
- Slowly add a small amount of the hot milk mixture into the 3 beaten egg yolks, whisking continuously to prevent curdling.
- Gradually add the tempered egg mixture back into the saucepan, still whisking constantly.
4. Finish the Custard:
- Return the saucepan to the stove and cook over low heat for an additional PT3M (3 minutes) until the custard is very thick.
- Remove from heat and stir in 1 teaspoon vanilla flavoring.
- Allow the custard to cool for PT15M (15 minutes).
5. Assemble the Pie:
- Spread 2 cups of sliced strawberries evenly over the prepared vanilla wafer crust.
- Pour the cooled custard over the strawberries, ensuring even coverage.
6. Make the Meringue:
- In a clean, dry bowl, beat 3 egg whites on high speed until soft peaks form.
- Gradually add 2 tablespoons sugar, beating until stiff peaks form.
7. Bake the Pie:
- Spread the meringue over the filled pie, sealing the edges to the crust to prevent shrinking or weeping.
- Bake in the preheated oven for PT10M (10 minutes) until the meringue is golden brown.
8. Cool and Serve:
- Allow the pie to cool to room temperature, then refrigerate for at least PT2H (2 hours) before serving.
- Garnish with the remaining strawberries before serving for an extra burst of freshness.
