Strawberry Layered Delight Cake



Ingredients


- 1 box White Cake Mix (about 15.25 oz)
- 1 package Jello Instant Vanilla Pudding Mix (3.4 oz)
- 1 cup Sour Cream
- 3/4 cup Canola Oil
- 4 large Eggs
- 1/4 cup Milk
- 1 teaspoon Vanilla Extract
- 1/4 cup Water
- 1 package Strawberry Junket (4.75 oz)
- 1 cup Strawberries, hulled and sliced
- 1 cup Heavy Cream
- 1/2 cup Powdered Sugar
- 8 oz Cream Cheese, softened

Instructions


1. Prepare the Cake Batter
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the white cake mix, Jello instant vanilla pudding mix, sour cream, and canola oil. Blend until well incorporated.
- Add the eggs one at a time, mixing thoroughly after each addition.
- Pour in the milk, vanilla extract, and water. Mix until the batter is smooth and creamy.

2. Bake the Cake
- Grease two 9-inch round cake pans with butter or cooking spray. Divide the batter evenly between the two pans.
- Bake in the preheated oven for approximately 30 minutes or until a toothpick inserted into the center of the cakes comes out clean.
- Once baked, remove the cakes from the oven and allow them to cool in the pans for 10 minutes. Then, invert them onto wire racks to cool completely.

3. Strawberry Layer Filling
- Prepare the strawberry junket according to package instructions and allow it to thicken to a spreadable consistency.
- Once the cakes are cooled, spread a generous layer of the strawberry junket onto one of the cake layers. Arrange a layer of sliced strawberries over the junket.

4. Cream Cheese Frosting
- In a medium bowl, beat the cream cheese until smooth. Gradually add the powdered sugar and continue beating until fluffy.
- In a separate bowl, whip the heavy cream until soft peaks form. Gently fold the whipped cream into the cream cheese mixture until well combined.

5. Assemble the Cake
- Place the second cake layer on top of the strawberry layer.
- Spread the cream cheese frosting evenly over the top and sides of the cake. Decorate with remaining sliced strawberries.
