Strawberry Pecan Walnut Delight Cake



Ingredients



- Fruit Base:
- 2 cups fresh strawberries, hulled and halved
- 2 tablespoons granulated sugar

- Cake Batter:
- 1 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 3 large eggs
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 cup sour cream
- 1/4 cup buttermilk
- 1 teaspoon vanilla extract

- Nut Topping:
- 1/2 cup pecans, chopped
- 1/2 cup walnuts, chopped
- 2 tablespoons butter, melted

Instructions



1. Prepare the Oven and Baking Dish:
- Preheat your oven to 350°F (175°C).
- Grease a 9x13-inch baking dish or line it with parchment paper to ensure easy removal of the cake.

2. Make the Fruit Base:
- In a medium bowl, toss the halved strawberries with 2 tablespoons of sugar.
- Spread them evenly across the bottom of the prepared baking dish.

3. Prepare the Cake Batter:
- In a large mixing bowl, cream 1 cup of softened butter with 1 1/2 cups of sugar until light and fluffy. This should take about 3-5 minutes.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the flour, salt, baking powder, and baking soda.
- Gradually add the dry ingredients to the creamed mixture, alternating with sour cream and buttermilk. Begin and end with the dry ingredients. Stir in the vanilla extract until just combined.

4. Assemble the Cake:
- Pour the cake batter over the strawberries in the baking dish, spreading it evenly with a spatula.

5. Prepare the Nut Topping:
- In a small bowl, mix the chopped pecans and walnuts with the melted butter.
- Sprinkle the nut mixture evenly over the top of the cake batter.

6. Bake the Cake:
- Bake in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- If the nuts begin to brown too quickly, cover the top of the cake with aluminum foil.

7. Cool and Serve:
- Allow the cake to cool in the pan on a wire rack for at least 20 minutes.
- Carefully invert the cake onto a large platter so the strawberries are on top.
- Serve warm or at room temperature.
