Strawberry Rhubarb Delight Pie with Orange Zest



Ingredients



- 2 cups strawberries, hulled and quartered
- 2 cups rhubarb, chopped
- 1 tablespoon orange zest
- 1/3 cup granulated sugar
- 1/4 cup quick cooking tapioca
- 1 tablespoon butter
- 1 package (about 14 oz) refrigerated pie dough (two 9-inch rounds)
- 1/4 cup sour cream
- 2 tablespoons shortening
- Vanilla ice cream, for serving
- Whipped cream, for garnish

Instructions



1. Preheat and Prepare: Preheat the oven to 425°F (220°C).

2. Prepare the Filling: In a large bowl, combine the strawberries, rhubarb, orange zest, granulated sugar, and quick cooking tapioca. Mix well to coat all the fruit. Let it stand for about 15 minutes to allow the tapioca to begin thickening the juices.

3. Prepare the Pie Crust: Unroll one pie dough round onto a lightly floured surface. Roll it out slightly to fit a 9-inch pie plate and brush with a little water. Carefully ease the dough into the pie plate, pressing gently to fit.

4. Fill the Pie: Spoon the fruit mixture into the pie crust in the plate. Dot with small pats of butter over the fruit mixture.

5. Cover with Top Crust: Roll out the second round of pie dough. Use a small knife to cut slits or create designs in the top crust to allow steam to escape. Place it over the filling. Trim excess dough, fold edges under, and crimp decoratively.

6. Create the Crust Wash: In a small bowl, mix sour cream and shortening until smooth. Lightly brush over the top crust.

7. Bake: Place the pie on a baking sheet to catch any drips. Bake in the preheated oven for 20 minutes. Reduce the oven temperature to 375°F (190°C), and continue baking for an additional 30 minutes or until the crust is golden brown and the filling is bubbly.

8. Cool: Remove pie from oven and let cool on a wire rack for at least 2 hours. This helps the filling to set.

9. Serve: Slice and serve each piece warm or at room temperature. Top with a scoop of vanilla ice cream and a dollop of whipped cream.
