Strawberry Shortcake Delight with Greek Yogurt & Honey
Ingredients
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/4 cup granulated sugar
- 1/2 teaspoon salt
- 1/2 cup unsalted butter, chilled and cubed
- 3/4 cup Greek yogurt
- 1 teaspoon vanilla extract
- 1 cup heavy cream
- 2 cups fresh strawberries, sliced
- 1/4 cup honey
- 1 cup whipping cream, chilled
- 2 tablespoons powdered sugar
Instructions
1. Preheat the Oven:
Preheat your oven to 425°F (220°C).
2. Prepare the Dry Ingredients:
In a large mixing bowl, combine 2 cups of all-purpose flour, 1 tablespoon of baking powder, 1/4 cup of granulated sugar, and 1/2 teaspoon of salt. Mix well.
3. Incorporate the Butter:
Add 1/2 cup of chilled, cubed unsalted butter into the flour mixture. Use a pastry cutter or your fingertips to work the butter into the flour until it resembles coarse crumbs.
4. Stir in Wet Ingredients:
In a separate bowl, whisk together 3/4 cup of Greek yogurt and 1 teaspoon of vanilla extract. Gradually mix this into the dry ingredients, gently folding until a dough begins to form.
5. Shape the Dough:
Turn the dough onto a lightly floured surface. Gently knead a few times, then pat it into a 1-inch thick circle. Cut into round shapes using a biscuit cutter.
6. Bake:
Arrange the shortcakes on a baking sheet lined with parchment paper. Bake in the preheated oven for 12-15 minutes or until the tops are golden. Transfer to a wire rack to cool.
7. Prepare the Strawberries:
While the shortcakes cool, combine 2 cups of sliced fresh strawberries with 1/4 cup of honey. Allow to macerate until the strawberries release their juices.
8. Whip the Cream:
In a chilled bowl, beat 1 cup of whipping cream with 2 tablespoons of powdered sugar until soft peaks form.
9. Assemble the Dessert:
Halve the shortcakes horizontally. Place the bottom half on a serving plate, spoon over some macerated strawberries and juice, and top with whipped cream. Place the other half of the shortcake on top, then add more strawberries and a dollop of whipped cream if desired.
