Strawberry Shortcake Delight with Vanilla Ice Cream



Ingredients



- For the Shortcake:
- 2 cups All-Purpose Flour
- 3 tablespoons Granulated Sugar
- 1 tablespoon Baking Powder
- 1/2 teaspoon Salt
- 1/2 cup Unsalted Butter, chilled and diced
- 3/4 cup Buttermilk
- 1 large Egg, beaten

- For the Strawberry Filling:
- 1 pint Fresh Strawberries, hulled and sliced
- 2 tablespoons Granulated Sugar

- For the Whipped Cream:
- 1 cup Heavy Whipping Cream
- 2 tablespoons Powdered Sugar
- 1 teaspoon Vanilla Extract

- For Serving:
- Vanilla Ice Cream

Instructions



1. Prepare the Shortcake:
- Preheat your oven to 425°F (220°C).
- In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt.
- Add the chilled, diced unsalted butter into the flour mixture. Use a pastry cutter or your fingers to blend until the mixture resembles coarse crumbs.
- Mix in the beaten egg and buttermilk to form a soft dough.
- Turn the dough out onto a floured surface and knead gently to bring it together. Pat the dough into a 1-inch thick rectangle.
- Cut the dough into desired shapes (circles or squares) using a biscuit cutter.
- Place the shortcake pieces on a baking sheet lined with parchment paper.
- Bake in the preheated oven for 12-15 minutes until golden brown. Allow them to cool on a wire rack.

2. Prepare the Strawberry Filling:
- While the shortcakes are baking, combine the sliced strawberries and granulated sugar in a bowl. Allow them to macerate at room temperature until juicy, about 10-15 minutes.

3. Prepare the Whipped Cream:
- In a chilled mixing bowl, whip the heavy cream until soft peaks form.
- Gradually add powdered sugar and vanilla extract while continuing to whip until stiff peaks form.

4. Assemble the Dessert:
- Slice each shortcake in half horizontally. Place the bottom halves on serving plates.
- Spoon a generous amount of the strawberry filling over the shortcake bottoms.
- Add a dollop of whipped cream on top of the strawberries.
- Place the top halves of the shortcakes over the whipped cream.
- Add another spoonful of strawberries and a dollop of whipped cream on the top.
- Serve each strawberry shortcake with a scoop of vanilla ice cream on the side.
