Stuffed Bell Peppers with Italian Sausage and Ricotta



Ingredients


- 4 large bell peppers (red, yellow, or green)
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 pound Italian sausage, casings removed
- 2 cups fresh spinach, chopped
- 3 cloves garlic, minced
- 1/2 teaspoon crushed red pepper flakes
- 1 cup diced tomatoes (canned or fresh)
- 1 cup ricotta cheese
- 1 cup cherry tomatoes, halved
- 1 cup shredded mozzarella cheese
- Fresh basil leaves, for garnish

Instructions


1. Preheat the Oven
Begin by preheating your oven to 375°F (190°C). This will ensure the peppers cook evenly.

2. Prepare the Bell Peppers
Slice the tops off the bell peppers and remove the seeds and membranes. Brush the inside and outside with 1 tablespoon of olive oil, then season with 1/2 teaspoon of salt and a pinch of black pepper.

3. Cook the Sausage Filling
In a large skillet over medium heat, add the remaining 1 tablespoon of olive oil. Crumble the Italian sausage into the skillet and cook thoroughly until browned, about 7-10 minutes. Drain any excess fat.

4. Add Vegetables and Seasonings
To the cooked sausage, add the chopped spinach, minced garlic, and crushed red pepper flakes. Cook for an additional 2-3 minutes until the spinach is wilted and the garlic is fragrant.

5. Incorporate Tomatoes and Ricotta
Stir in the diced tomatoes and ricotta cheese, mixing until everything is well combined. Taste and adjust seasoning with remaining salt and black pepper as needed.

6. Stuff the Peppers
Evenly spoon the sausage and ricotta mixture into each prepared bell pepper, packing the filling firmly.

7. Add Cherry Tomatoes and Mozzarella Topping
Top each stuffed pepper with halved cherry tomatoes and a generous amount of shredded mozzarella cheese.

8. Bake the Peppers
Place the filled bell peppers in a baking dish and cover with foil. Bake in the preheated oven for 25-30 minutes, then remove the foil and bake an additional 10 minutes, or until the cheese is bubbly and golden.

9. Garnish and Serve
Once done, remove from the oven and let cool slightly. Garnish with fresh basil leaves before serving.
