Succulent Herb-Crusted Oven-Baked Ribeye
Ingredients
- 1 bone-in ribeye steak (approximately 2 lbs)
- 2 teaspoons salt
- 1 teaspoon freshly ground black pepper
- 3 tablespoons clarified butter
- 4 sprigs fresh thyme
- 2 bay leaves
- 2 sprigs fresh rosemary
- 4 cloves garlic, smashed
- 2 shallots, peeled and halved
Instructions
1. Preheat the Oven
Preheat your oven to 400°F (204°C).
2. Prepare the Steak
Pat the ribeye steak dry with paper towels. Season generously on both sides with salt and freshly ground black pepper. Let it rest at room temperature for about 10 minutes.
3. Heat the Skillet
In a large oven-safe skillet, melt 3 tablespoons of clarified butter over medium-high heat. Once the butter is hot and shimmering, add the smashed garlic, shallots, fresh thyme, bay leaves, and rosemary.
4. Sear the Steak
Carefully place the ribeye steak into the hot skillet. Sear each side for approximately 3-4 minutes until a golden-brown crust forms. Be sure to occasionally tilt the pan and use a spoon to baste the steak with the fragrant butter and herbs.
5. Transfer to Oven
Keeping the aromatic elements in the skillet, transfer the entire pan to the preheated oven. Roast the ribeye for approximately 10-12 minutes for medium-rare doneness. Adjust the time by 2-3 minutes longer or shorter depending on desired doneness.
6. Rest the Steak
Carefully remove the skillet from the oven using oven mitts. Transfer the ribeye to a cutting board, tent loosely with aluminum foil, and let it rest for at least 10 minutes to retain its juices.
7. Serve
Slice the ribeye against the grain, arrange the slices on a serving platter, and drizzle with the herb-infused butter from the skillet. Garnish with additional fresh thyme and rosemary if desired.
