Succulent Herb-Roasted Chicken with Root Vegetables
Ingredients
- 1 whole chicken (about 4 pounds)
- 3 tablespoons olive oil
- 1 tablespoon salt
- 1 tablespoon black pepper
- 1 tablespoon dried thyme
- 1 tablespoon dried rosemary
- 1 lemon, halved
- 3 cloves garlic, minced
- 1 pound carrots, peeled and cut into large chunks
- 1 pound parsnips, peeled and cut into large chunks
- 1 pound potatoes, quartered
- 2 tablespoons butter, melted
- Fresh parsley, chopped for garnish
Instructions
1. Preheat the Oven: Set your oven to 425°F (220°C) to preheat.
2. Prepare the Chicken: Rinse and pat dry the whole chicken with paper towels. Place it in a large roasting pan.
3. Season the Chicken: Drizzle 2 tablespoons of olive oil over the chicken. Rub the salt, pepper, thyme, rosemary, and minced garlic onto the skin of the chicken, ensuring even coverage. Squeeze the juice of both lemon halves over the chicken, and place the lemon halves inside the cavity for extra flavor.
4. Prepare the Vegetables: In a large bowl, combine the carrots, parsnips, and potatoes. Drizzle with the remaining tablespoon of olive oil and melted butter. Season with salt and pepper to taste, then toss to coat.
5. Roast the Chicken and Vegetables: Arrange the seasoned vegetables around the chicken in the roasting pan. Place the pan in the preheated oven. Roast for 1 hour and 30 minutes, basting the chicken with its juices halfway through the cooking time.
6. Check for Doneness: Insert a meat thermometer into the thickest part of the chicken thigh. Ensure it reads 165°F (74°C) for safe consumption.
7. Rest and Serve: Once cooked, remove the chicken from the oven and let it rest for 10 minutes before carving. Sprinkle chopped fresh parsley over the chicken and vegetables for garnish.
