Succulent Lemon Herb Grilled Chicken
Ingredients
- 4 boneless, skinless chicken breasts (about 6 ounces each)
- 1/3 cup olive oil
- 1/4 cup fresh lemon juice (about 2 lemons)
- 4 cloves garlic, minced
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, sliced for garnish
- Fresh parsley for garnish (optional)
Instructions
1. Prepare the Marinade:
- In a medium bowl, whisk together 1/3 cup olive oil, 1/4 cup fresh lemon juice, 4 minced garlic cloves, 1 tablespoon chopped rosemary, 1 tablespoon chopped thyme, 1 teaspoon salt, and 1/2 teaspoon black pepper until well combined.
2. Marinate the Chicken:
- Place the 4 chicken breasts in a large resealable plastic bag or shallow dish.
- Pour the marinade over the chicken breasts, ensuring they are evenly coated.
- Seal the bag or cover the dish, and refrigerate for at least 1 hour, or up to 8 hours for optimal flavor infusion.
3. Preheat the Grill:
- Preheat your grill to medium-high heat (about 375°F to 450°F).
4. Grill the Chicken:
- Remove the chicken from the marinade, allowing excess to drip off, and discard the marinade.
- Place the chicken on the grill, and cook for 6-7 minutes per side, or until the internal temperature reaches 165°F.
- Avoid flipping the chicken more than once to achieve beautiful grill marks and retain juices.
5. Garnish and Serve:
