Succulent Lemon-Oregano Chicken Thighs with Herbed Potatoes



Ingredients



- 8 boneless, skinless chicken thighs
- 2 teaspoons dried oregano
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
- 4 cloves garlic, minced
- 3 tablespoons extra virgin olive oil, divided
- 1 large lemon, zested and juiced
- 4 medium russet potatoes, peeled and diced
- 2 cups water

Instructions



1. Marinate the Chicken:
- In a large bowl, combine the dried oregano, kosher salt, black pepper, minced garlic, and half of the lemon zest with 2 tablespoons of extra virgin olive oil.
- Add the chicken thighs, ensuring they are evenly coated with the marinade. Let sit for 20 minutes at room temperature to allow flavors to develop.

2. Prepare the Potatoes:
- In a medium saucepan, bring 2 cups of water to a boil. Add the diced russet potatoes and a pinch of salt. Boil for 10 minutes or until just tender. Drain and set aside.

3. Cook the Chicken:
- Heat a large skillet over medium-high heat and add 1 tablespoon of extra virgin olive oil.
- Place the marinated chicken thighs in the skillet, skin-side down. Cook for 5-7 minutes on each side, or until golden brown and cooked through. Remove and set aside on a plate.

4. Sauté the Potatoes:
- In the same skillet, add the parboiled potatoes. Sauté in the residual oil until they develop a golden crust, about 5-7 minutes. Stir in the remaining lemon zest.

5. Combine the Dish:
- Reduce the heat to low and return the chicken to the skillet. Squeeze the lemon juice over the chicken and potatoes, cooking for an additional 2 minutes to warm through and meld flavors.

6. Serve:
- Transfer the dish to a serving platter and garnish with freshly chopped herbs if desired. Serve warm and enjoy your flavorful dinner creation!
