Succulent Oven-Braised Beef Stew
Ingredients
- 2 pounds beef chuck roast, cut into 1-inch cubes
- 2 tablespoons olive oil
- 2 large onions, chopped
- 3 carrots, peeled and sliced
- 3 stalks celery, sliced
- 4 medium potatoes, peeled and cut into chunks
- 4 cups beef stock
- 1 cup red wine
- 4 cloves garlic, minced
- 2 sprigs fresh rosemary
- 1 teaspoon dried thyme
- 1 bay leaf
- 2 tablespoons all-purpose flour
- 2 tablespoons cornstarch
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
1. Preheat the Oven:
Preheat your oven to 325°F (160°C).
2. Prepare the Beef:
- In a large oven-safe dutch oven or heavy-bottomed pot, heat 2 tablespoons of olive oil over medium-high heat.
- Season the beef cubes with salt and pepper.
- Working in batches, sear the beef until browned on all sides. Remove browned beef from the pot and set aside.
3. Sauté the Aromatics:
- In the same pot, add the chopped onions, garlic, carrots, and celery.
- Sauté for about 5 minutes until the onions are translucent and the vegetables begin to soften.
4. Create the Stew Base:
- Sprinkle the flour over the vegetables and stir well, cooking for 2 minutes.
- Pour in the red wine, scraping up any browned bits from the bottom of the pot.
- Add beef stock, rosemary sprigs, thyme, bay leaf, and bring to a simmer.
5. Assemble the Stew:
- Return the seared beef to the pot, stirring to combine.
- Add the potato chunks to the mixture.
6. Oven Braising:
- Cover the pot with a lid and transfer to the preheated oven.
- Braise in the oven for about 2 hours, or until the beef is tender and potatoes are cooked through.
7. Thicken the Stew:
- Once the stew is cooked, remove it from the oven.
- In a small bowl, mix the cornstarch with a few tablespoons of cold water to form a slurry.
- Stir the cornstarch slurry into the stew and let sit for 5 minutes to thicken.
8. Final Seasoning:
- Remove the bay leaf and rosemary sprigs.
- Taste and adjust seasoning with additional salt and pepper if needed.
- Serve hot, garnished with fresh thyme if desired.
