Succulent Oven-Roasted Beef and Herb Medley
Ingredients
- 1 ½ pounds ground beef
- ½ cup breadcrumbs
- ½ cup grated Parmesan cheese
- 1 large egg
- 2 cloves garlic, minced
- 1 tablespoon fresh parsley, chopped
- 1 tablespoon fresh basil, chopped

- 1 cup beef broth

- 4 medium red potatoes, quartered
- 2 large carrots, sliced
- 1 large onion, cut into wedges
Instructions
1. Preheat the Oven
Preheat your oven to 375°F (190°C).
2. Prepare the Beef Mixture
In a large mixing bowl, combine the ground beef, breadcrumbs, Parmesan cheese, egg, minced garlic, parsley, basil, thyme, salt, pepper, and onion powder. Mix thoroughly until all ingredients are well incorporated.
3. Form the Beef Loaf
Shape the mixture into a loaf and place it in the center of a large roasting pan.
4. Arrange the Vegetables
Surround the beef loaf with the quartered potatoes, sliced carrots, and onion wedges.
5. Prepare the Roasting Liquid
In a separate bowl, whisk together the olive oil, beef broth, and Worcestershire sauce. Pour the mixture over the beef loaf and vegetables.
6. Roast in the Oven
Cover the roasting pan with aluminum foil and place it in the preheated oven. Roast for PT1H (1 hour).
7. Uncover and Continue Roasting
Remove the foil and roast for an additional PT20M (20 minutes) until the vegetables are tender and the beef loaf reaches an internal temperature of 160°F (71°C).
8. Resting Period
Let the beef medley rest for a few minutes before slicing.
9. Serve
Slice the beef loaf and serve with the roasted vegetables. Ladle the pan juices over the dish for added flavor.
