Succulent Rotisserie Chicken Delight
Ingredients
- 1 whole chicken (approximately 4 pounds)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 teaspoons salt
- 1 teaspoon black pepper
- 1 tablespoon paprika
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1 lemon, quartered
- 4 sprigs fresh parsley (optional, for garnish)
Instructions
1. Prepare the Chicken
Rinse the chicken under cold water and pat dry with paper towels. Ensure the cavity is clean and free of giblets.
2. Season the Chicken
In a small bowl, combine minced garlic, salt, black pepper, paprika, thyme, and rosemary. Stir in olive oil to form a paste. Rub this mixture evenly over the entire chicken, including under the skin and inside the cavity.
3. Stuff and Truss the Chicken
Place the lemon quarters inside the cavity of the chicken. Using kitchen twine, tie the legs together to ensure even cooking.
4. Preheat and Prepare Rotisserie
Prepare your rotisserie grill by preheating to a medium heat, approximately 350°F. If using a charcoal grill, arrange coals to the side for indirect heat.
5. Mount the Chicken
Secure the chicken on the rotisserie spit, ensuring it is balanced and stable. Insert the spit into the rotisserie motor mechanism according to instructions.
6. Cook the Chicken
Cook the chicken on the rotisserie for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F. Baste occasionally with drippings for added moisture.
7. Rest and Serve
Carefully remove the chicken from the spit and let it rest for 10 minutes before carving. Garnish with fresh parsley if desired. Serve hot with your choice of sides.
