Succulent Slow-Roasted Chuck Roast Dinner



Ingredients



- 3 tablespoons oil
- 1 tablespoon salt
- 2 teaspoons freshly ground pepper
- 2 large onions, sliced
- 4 medium carrots, peeled and sliced
- 3 pounds chuck roast
- 3 cups beef stock

Instructions



1. Preparation: Begin by preheating your oven to 325°F. While the oven heats, prepare your ingredients by slicing the onions and carrots and setting them aside.

2. Season the Roast: Pat the chuck roast dry with paper towels. Sprinkle evenly with 1 tablespoon salt and 2 teaspoons freshly ground pepper, ensuring all sides are coated.

3. Sear the Roast: In a large oven-safe skillet or Dutch oven, heat 3 tablespoons of oil over medium-high heat. Once the oil is hot but not smoking, carefully add the chuck roast. Sear each side for 4-5 minutes until a deep brown crust forms. Remove the roast and set aside.

4. Sauté the Vegetables: In the same skillet, use the remaining oil to sauté the sliced onions until they are translucent, about 5 minutes. Add the carrots and continue to cook for an additional 3 minutes.

5. Deglaze the Pan: Pour 1 cup of beef stock into the pan to deglaze, scraping the fond (brown bits at the bottom) with a spatula for added flavor.

6. Roast in the Oven: Return the seared chuck roast to the skillet, nestling it among the onions and carrots. Pour the remaining 2 cups of beef stock over the roast and vegetables.

7. Bake: Cover the skillet with a lid or aluminum foil and place it in the preheated oven. Bake for 2 hours until the meat is tender and falls apart easily when tested with a fork.

8. Rest and Serve: Once cooked, remove the chuck roast from the oven and let it rest, covered, for about 10 minutes. This allows the juices to redistribute within the meat. Slice the roast against the grain and serve with the roasted vegetables and pan juices drizzled over the top.
