Succulent Stove-Top Vinegar-Glazed Chicken Thighs
Ingredients
- 8 bone-in, skin-on chicken thighs
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 6 cloves garlic, minced
- 1 cup white vinegar
- 1 cup chicken broth
- 2 tablespoons honey
- 1 tablespoon soy sauce
- 1 teaspoon fresh thyme leaves
- 2 tablespoons unsalted butter
Instructions
1. Prepare the Chicken:
- Pat the chicken thighs dry with paper towels. Season generously on both sides with salt and black pepper.
2. Sear the Chicken:
- In a large skillet over medium-high heat, add the olive oil and heat until shimmering. Place the chicken thighs skin side down in the skillet. Allow them to cook undisturbed for about 5 minutes, or until the skin is golden brown and crispy.
- Flip the chicken and cook for another 5 minutes on the other side. Remove the chicken from the skillet and set aside.
3. Make the Glaze:
- Reduce the heat to medium and add the minced garlic to the skillet. Sauté for about 30 seconds until fragrant but not browned.
- Carefully pour in the white vinegar, scraping up any browned bits from the bottom of the pan with a wooden spoon.
- Stir in the chicken broth, honey, soy sauce, and fresh thyme. Bring the mixture to a simmer.
4. Cook the Chicken in the Glaze:
- Return the chicken thighs to the skillet, skin side up. Reduce the heat to low, cover, and simmer for 20 minutes.
5. Finish the Dish:
- Uncover the skillet and increase the heat to medium-high to bring the sauce to a gentle boil. Cook for an additional 5-7 minutes, basting the chicken frequently with the glaze, until the sauce has reduced and thickened slightly.
- Remove the skillet from the heat and stir in the unsalted butter for added richness and shine.
6. Serve:
- Serve the chicken thighs drizzled with the vinegar glaze. Ideal accompaniments include mashed potatoes, sautéed green beans, or a fresh garden salad.
