Summer Berry Chicken Salad with Poppyseed Dressing
Ingredients
Main Salad Components:
- 2 large chicken breasts
- 2 tablespoons BBQ Rub
- 2 tablespoons butter
- 2 cups butter lettuce, torn into bite-sized pieces
- 1 cup baby spinach and kale combo
- 1 avocado, sliced
- 1/2 cup raspberries
- 1/2 cup strawberries, sliced
- 1/2 cup blueberries
- 1/2 cup blackberries
- 1/2 cup candied pecans
- 1/2 cup crumbled mild blue cheese
Poppyseed Dressing:
- 1/2 cup plain Greek yogurt
- 1/4 cup sugar
- 3 tablespoons prosecco or champagne vinegar
- 1 tablespoon poppy seeds
Instructions
1. Prepare the Chicken
- Rub the chicken breasts evenly with the BBQ rub.
- Melt butter in a skillet over medium heat on the stove.
- Place the chicken breasts in the skillet and cook for about 6–7 minutes on each side, or until each chicken breast reaches an internal temperature of 165°F.
- Remove from the pan, let rest for 5 minutes, then slice.
2. Prepare the Dressing
- In a mixing bowl, whisk together plain Greek yogurt, sugar, prosecco or champagne vinegar, and poppy seeds until sugar dissolves and the dressing is smooth.
3. Assemble the Salad
- In a large salad bowl, combine butter lettuce, spinach and kale combo, raspberries, strawberries, blueberries, blackberries, and candied pecans.
- Add the sliced avocado and crumbled mild blue cheese.
- Arrange the sliced chicken breasts over the top.
4. Dress the Salad
- Drizzle the poppyseed dressing over the salad just before serving, or serve it on the side.
