Summer Peach and Burrata Salad with Herb Vinaigrette
Ingredients
- 2 ripe peaches, pitted and sliced
- 1 ball of burrata cheese (approximately 4 ounces)
- 1/4 cup fresh basil leaves, torn
- 1/4 cup fresh parsley leaves, chopped
- 1 small red onion, thinly sliced
- 1/4 cup pine nuts, toasted
- 2 tablespoons champagne vinegar
- 1 tablespoon fresh lemon juice
- 1/4 cup olive oil
- 1/2 teaspoon salt
- 1/2 teaspoon sugar
- 1/4 teaspoon freshly ground black pepper
- Balsamic glaze, for drizzling
Instructions
1. Prepare the Vinaigrette:

- Add the thinly sliced red onions and sprinkle the toasted pine nuts on top.
4. Dress the Salad:
- Drizzle the prepared vinaigrette over the salad, ensuring even coverage.
- Finish with a generous drizzle of balsamic glaze for added sweetness and color contrast.
5. Serve and Enjoy:
- Season with additional salt and black pepper to taste if desired.
