Summery Spaghettini with Grilled Chicken and Mediterranean Garnish
Ingredients
- Main Components:
- 8 oz spaghettini
- 2 grilled chicken breasts, sliced

- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved

- 1/4 cup favorite salad dressing
- 1 small baguette or 1/2 sourdough loaf, sliced
Instructions
1. Prepare the Pasta and Grilled Chicken:
- Fill a large pot with salted water and bring to a boil over high heat.
- Add the spaghettini and cook until al dente, about PT8M (8 minutes).
- Drain the pasta and set aside.
- Concurrently, reheat the grilled chicken by gently warming it in a pan over medium heat, then slice it into strips.
2. Create the Mediterranean Garnish:
- In a large skillet, heat 2 tablespoons of olive oil over medium heat.
- Add the minced garlic and sauté until fragrant, approximately PT2M (2 minutes).
- Stir in cherry tomatoes and black olives; cook until the tomatoes start to soften, around PT5M (5 minutes).
- Season with salt and pepper to taste.
- Add the cooked spaghettini to the skillet. Toss gently to combine with the garlic, tomatoes, and olives.
- Remove from heat, and stir in the fresh basil.
3. Assemble the Dish:
- Plate the spaghettini mixture onto serving dishes.
- Arrange sliced grilled chicken on top.
- Sprinkle feta and dollop ricotta evenly over each portion.
- Drizzle a touch of remaining olive oil and lemon juice to climax the flavors.
4. Prepare the Accompaniments:
- In a salad bowl, mix the chopped romaine with diced vegetables.
- Dress with your chosen salad dressing and toss to combine.
- Slice the baguette or sourdough and serve alongside the pasta dish.
