Summery Watermelon and Strawberry Gazpacho
Ingredients
- 4 cups watermelon, cubed
- 1 cup strawberries, hulled and quartered
- 1/2 English cucumber, peeled and diced
- 1 lime, juiced and zested
Instructions
1. Prepare the Ingredients: Start by gathering all your ingredients. Cube the watermelon and place it in a large bowl. Hull and quarter the strawberries. Peel and dice the English cucumber. Juice and zest the lime.
2. Blend the Base: Add the watermelon, strawberries, cucumber, lime juice, and lime zest into a blender. Blend on high speed until the mixture is smooth and well-combined.
3. Strain for Smoothness: For a smoother consistency, pour the blended mixture through a fine mesh sieve into a saucepan, using a spatula to press the liquid through. Discard the pulp that remains in the sieve.
4. Heat the Gazpacho: Place the saucepan on the stove over medium-low heat. Gently warm the gazpacho, stirring occasionally, for about 10 minutes. It is important not to bring it to a boil; you are only warming it enough to meld the flavors.
5. Chill: Once warmed through, remove the saucepan from the heat and allow it to cool. Transfer the gazpacho to a container and refrigerate for at least 1 hour, allowing it to chill completely.
6. Serve: Pour the chilled gazpacho into bowls and serve immediately. Optionally, garnish with a slice of lime or a small mint leaf for added flair.
