Sumptuous Herb-Roasted Tomato, Basil, Peppers, and Mushrooms
Ingredients
- 4 large tomatoes, quartered
- 1 cup fresh basil leaves, whole
- 2 bell peppers (red and yellow), sliced
- 12 oz mushrooms, quartered
- 2 tbsp olive oil
- 1 tsp kosher salt
- 1/2 tsp freshly ground black pepper
- 1 tsp dried Italian herbs (oregano, thyme, rosemary)
- 2 cloves garlic, minced
Instructions
1. Preheat the oven to 400°F (200°C).
2. Prepare the vegetables: Quarter the tomatoes, slice the bell peppers, and quarter the mushrooms.
3. In a large mixing bowl, combine the tomatoes, basil leaves, sliced peppers, and mushrooms.
4. Drizzle with olive oil and gently toss to coat all vegetables evenly.
5. Season the mixture with kosher salt, freshly ground black pepper, and the dried Italian herbs. Add the minced garlic and continue to mix until all ingredients are well incorporated.
6. Arrange the seasoned vegetables in a single layer on a large baking sheet.
7. Place the baking sheet in the preheated oven and roast for approximately PT25M
25 minutes, or until the vegetables are tender and slightly caramelized.
8. Remove the sheet from the oven, allow the dish to cool slightly, and serve warm. Enjoy as a delightful dinner centerpiece or a vibrant side dish.
